For the Crust:
- 1 1/2 cups chocolate cookie crumbs
- 750g cream cheese, softened
- 1 cup granulated sugar
- 1 cup heavy cream
- 3 large eggs
- 1 teaspoon vanilla extract
- 200g dark chocolate, melted
- 1 can cherry pie filling
Instructions
1. Prepare the Crust:
- Preheat the oven to 325ยฐF (160ยฐC). Grease a 9-inch springform pan.
- Combine chocolate cookie crumbs with melted butter and press into the bottom of the prepared pan to form the crust.
- In a large bowl, beat the cream cheese and sugar until smooth. Add the heavy cream, eggs, vanilla extract, and melted chocolate. Beat until well combined.
- Pour the cheesecake batter over the crust. Bake for 50-60 minutes, or until the center is set and the edges are firm. Let it cool completely in the pan.
- Refrigerate the cheesecake for at least 4 hours or overnight. Top with the cherry pie filling before serving.
