For the Crust:
- 1 cup chocolate wafer cookies, crushed
- 3 tbsp unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup sour cream
- 1/2 cup cherry pie filling
- 1/4 cup semi-sweet chocolate, grated
Instructions
1. Prepare the Crust:
- Preheat oven to 325ยฐF (165ยฐC). In a bowl, combine the crushed chocolate wafer cookies and melted butter. Press mixture into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla and sour cream until fully combined.
- Pour the cream cheese mixture over the crust. Bake for 30 minutes or until the center is set. Allow to cool completely, then spread cherry pie filling on top. Garnish with grated chocolate before serving.
