A decadent rolled cake featuring chocolate sponge, whipped cream, and cherries, perfect for any celebration.

For the Crust:

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup cocoa powder
  • 3/4 cup all-purpose flour
  • 1 cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • 1 cup black cherries, pitted
  • 1 tablespoon kirsch (cherry liqueur)
  • Chocolate shavings for garnish

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C) and line a 10×15 inch baking pan with parchment paper.
  2. In a mixing bowl, beat eggs and sugar until thick and pale. Sift cocoa powder and flour into the mixture and fold gently.
  3. Spread the batter evenly in the prepared pan and bake for 10-12 minutes. Let cool slightly before turning onto a sugared towel.
  4. Whip the cream with powdered sugar until stiff peaks form. Spread over the cooled cake along with cherries. Roll the cake carefully, and refrigerate for 2 hours.
  5. Decorate the roll with chocolate shavings and a few extra cherries before serving.
