For the Crust:
- 4 large eggs
- 1/2 cup granulated sugar
- 1/4 cup cocoa powder
- 3/4 cup all-purpose flour
- 1 cup heavy whipping cream
- 1 tablespoon powdered sugar
- 1 cup black cherries, pitted
- 1 tablespoon kirsch (cherry liqueur)
- Chocolate shavings for garnish
Instructions
1. Prepare the Crust:
- Preheat the oven to 350°F (175°C) and line a 10×15 inch baking pan with parchment paper.
- In a mixing bowl, beat eggs and sugar until thick and pale. Sift cocoa powder and flour into the mixture and fold gently.
- Spread the batter evenly in the prepared pan and bake for 10-12 minutes. Let cool slightly before turning onto a sugared towel.
- Whip the cream with powdered sugar until stiff peaks form. Spread over the cooled cake along with cherries. Roll the cake carefully, and refrigerate for 2 hours.
- Decorate the roll with chocolate shavings and a few extra cherries before serving.
