- 4 salmon fillets (about 6 ounces each)
- 2 tablespoons blackened seasoning
- 2 cups fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the chopped spinach, grated Parmesan cheese, garlic powder, salt, and pepper.
- Using a sharp knife, cut a pocket into each salmon fillet without cutting all the way through.
- Stuff each salmon fillet with the spinach and Parmesan mixture, then rub the blackened seasoning evenly over the outside of the fillets.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the stuffed salmon fillets in the skillet for 2-3 minutes on each side until blackened.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
