Description

A spicy blackened salmon fillet stuffed with a mixture of fresh spinach and Parmesan cheese, perfect for a flavorful dinner.


Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 2 tablespoons blackened seasoning
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the chopped spinach, grated Parmesan cheese, garlic powder, salt, and pepper.
  3. Using a sharp knife, cut a pocket into each salmon fillet without cutting all the way through.
  4. Stuff each salmon fillet with the spinach and Parmesan mixture, then rub the blackened seasoning evenly over the outside of the fillets.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat.
  6. Sear the stuffed salmon fillets in the skillet for 2-3 minutes on each side until blackened.
  7. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
