- 2 cups all-purpose flour
- 1 cup cottage cheese
- 1 cup fresh blueberries
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, mix the cottage cheese, sugar, oil, and eggs until smooth.
- Gently fold the wet ingredients into the dry ingredients, then stir in the blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the tin for 5 minutes, then transfer to a wire rack.
Notes
For a healthier option, substitute whole wheat flour and reduce sugar. Store in an airtight container for up to 3 days.
