Description

These fluffy, protein-packed muffins combine blueberries and cottage cheese for a delicious treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup cottage cheese
  • 1 cup fresh blueberries
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the cottage cheese, sugar, oil, and eggs until smooth.
  4. Gently fold the wet ingredients into the dry ingredients, then stir in the blueberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool in the tin for 5 minutes, then transfer to a wire rack.

Notes

For a healthier option, substitute whole wheat flour and reduce sugar. Store in an airtight container for up to 3 days.
