Description

A delightful dessert featuring a creamy cheese filling with fresh blueberries on a buttery crust.


Ingredients

  • Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • Filling:
  • 2 packages (8 oz each) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Topping:
  • 2 cups fresh blueberries
  • 1/4 cup blueberry jam
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and grease a 9×13 inch baking pan.
  2. In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes, then remove from oven and let cool slightly.
  4. In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then stir in vanilla extract.
  5. Pour the cream cheese mixture over the cooled crust and spread evenly.
  6. In a small bowl, mix blueberries, blueberry jam, and lemon juice. Spoon this mixture over the cream cheese layer.
  7. Bake for 25-30 minutes or until the center is set. Let cool completely before cutting into bars.
  8. Refrigerate for at least 2 hours before serving.

Notes

For best results, use fresh blueberries. Store leftovers in an airtight container in the refrigerator for up to 3 days.
