A delightful twist on classic cheesecake with fresh blueberries and a zesty lime accent.

For the Crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Juice of 1 lime
  • Zest of 1 lime
  • 1 cup fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350ยฐF (175ยฐC) and line a muffin tin with cupcake liners.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press a tablespoon of the mixture into the bottom of each liner.
  3. In a separate bowl, beat cream cheese and sugar together until smooth. Add eggs, vanilla, lime juice, and zest, blending well.
  4. Fold in blueberries gently, then divide mixture among liners. Bake for 20-25 minutes or until the centers are set.
  5. Cool completely before refrigerating for at least 2 hours. Serve chilled.
