For the Crust:
- 1 cup graham cracker crumbs
- 2 tablespoons melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Juice of 1 lime
- Zest of 1 lime
- 1 cup fresh blueberries
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC) and line a muffin tin with cupcake liners.
- In a bowl, combine graham cracker crumbs and melted butter. Press a tablespoon of the mixture into the bottom of each liner.
- In a separate bowl, beat cream cheese and sugar together until smooth. Add eggs, vanilla, lime juice, and zest, blending well.
- Fold in blueberries gently, then divide mixture among liners. Bake for 20-25 minutes or until the centers are set.
- Cool completely before refrigerating for at least 2 hours. Serve chilled.
