  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg

  • 1/2 teaspoon salt
  • For the Filling:
  • 1 cup heavy whipping cream
  • 1/2 cup whole milk
  • 1 package (3.4 oz) instant vanilla pudding mix
  • For the Ganache:
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized balls of dough and roll them into balls. Place on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are set. Remove from the oven and let cool completely on a wire rack.
  8. While the cookies cool, prepare the filling: In a medium bowl, whisk together the heavy whipping cream, whole milk, and instant vanilla pudding mix until thickened. Refrigerate for at least 5 minutes to set.
  9. Once cookies are cool, sandwich about 1 tablespoon of the pudding filling between two cookies.
  10. For the ganache: In a microwave-safe bowl, combine the chocolate chips and heavy whipping cream. Microwave in 30-second intervals, stirring until smooth.
  11. Dip the tops of the filled cookies into the ganache, allowing excess to drip off. Let set at room temperature or refrigerate until ganache is firm.
  12. Serve and enjoy!
