- 1 cup heavy whipping cream
- 1/2 cup whole milk
- 1 package (3.4 oz) instant vanilla pudding mix
- For the Ganache:
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized balls of dough and roll them into balls. Place on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set. Remove from the oven and let cool completely on a wire rack.
- While the cookies cool, prepare the filling: In a medium bowl, whisk together the heavy whipping cream, whole milk, and instant vanilla pudding mix until thickened. Refrigerate for at least 5 minutes to set.
- Once cookies are cool, sandwich about 1 tablespoon of the pudding filling between two cookies.
- For the ganache: In a microwave-safe bowl, combine the chocolate chips and heavy whipping cream. Microwave in 30-second intervals, stirring until smooth.
- Dip the tops of the filled cookies into the ganache, allowing excess to drip off. Let set at room temperature or refrigerate until ganache is firm.
- Serve and enjoy!
