Description

Soft and delicious cookies inspired by the classic Boston cream pie, featuring a vanilla custard filling and a glossy chocolate glaze.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the filling: 1 cup milk
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • For the glaze: 1/2 cup semisweet chocolate chips
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  4. Gradually add dry ingredients to wet ingredients and mix until combined.
  5. Drop dough by tablespoonfuls onto the prepared baking sheet and bake for 10-12 minutes. Cool completely.
  6. For the filling: In a saucepan, heat milk until simmering. In a bowl, whisk sugar, cornstarch, and egg yolks.
  7. Slowly add hot milk to egg mixture, then return to saucepan and cook until thickened. Stir in vanilla and cool.
  8. Once cookies are cool, spread filling on the flat side of half the cookies and top with the other half.
  9. For the glaze: Melt chocolate chips and butter together, then drizzle over the assembled cookies. Let set before serving.

Notes

Store in an airtight container for up to 3 days. For a richer flavor, use high-quality chocolate.
