- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- For the filling: 1 cup milk
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 2 large egg yolks
- 1 teaspoon vanilla extract
- For the glaze: 1/2 cup semisweet chocolate chips
- 2 tablespoons unsalted butter
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
- Gradually add dry ingredients to wet ingredients and mix until combined.
- Drop dough by tablespoonfuls onto the prepared baking sheet and bake for 10-12 minutes. Cool completely.
- For the filling: In a saucepan, heat milk until simmering. In a bowl, whisk sugar, cornstarch, and egg yolks.
- Slowly add hot milk to egg mixture, then return to saucepan and cook until thickened. Stir in vanilla and cool.
- Once cookies are cool, spread filling on the flat side of half the cookies and top with the other half.
- For the glaze: Melt chocolate chips and butter together, then drizzle over the assembled cookies. Let set before serving.
Notes
Store in an airtight container for up to 3 days. For a richer flavor, use high-quality chocolate.
