A fun and portable twist on the classic dessert. These cupcakes feature a tender vanilla cake filled with rich custard and topped with a glossy chocolate ganache.

For the Crust:
- 1 box vanilla cake mix, plus ingredients to prepare
- 1 (3.4 oz) box instant vanilla pudding
- 2 cups cold milk
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
1. Prepare the Crust:
- Prepare and bake the vanilla cupcakes according to the package directions for 24 cupcakes. Allow them to cool completely.
- While cupcakes cool, make the filling by whisking the instant pudding mix with the cold milk for 2 minutes. Refrigerate for at least 5 minutes to set.
- For the ganache, place chocolate chips in a bowl. Heat the heavy cream until just simmering, then pour it over the chips. Let sit for 2 minutes, then whisk until smooth.
- Use a small knife or apple corer to remove a plug from the center of each cooled cupcake. Spoon or pipe the pudding filling into each hole.
- Spoon a layer of the chocolate ganache over the top of each filled cupcake, allowing it to drip down the sides slightly. Chill for 30 minutes to set the ganache.
