- 4 boneless, skinless chicken breasts
- 8 oz brie cheese, sliced
- 2 tbsp olive oil
- 1/4 cup balsamic vinegar
- 1/4 cup honey
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut a pocket into each chicken breast and stuff with brie slices.
- Season the chicken with salt and pepper.
- In a skillet, heat olive oil over medium heat and sear the chicken for 3-4 minutes per side.
- In a small bowl, mix balsamic vinegar, honey, and garlic.
- Brush the glaze over the chicken and transfer to the oven.
- Bake for 20-25 minutes until chicken is cooked through.
- Let rest for 5 minutes before serving.
Notes
For a crispier finish, broil for the last 2 minutes. Pairs well with roasted vegetables.
