Ingredients

  • 2 cups butternut squash, peeled and cubed
  • 3 cups fresh spinach
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roast the butternut squash in the oven for 25 minutes until tender.
  3. In a skillet, sauté onion and garlic until fragrant, then add spinach and cook until wilted.
  4. In a baking dish, layer the ingredients starting with noodles, ricotta, squash mixture, and cheeses.
  5. Repeat layers and top with mozzarella and Parmesan.
  6. Bake for 30-35 minutes until bubbly and golden.
