- 3 cups fresh spinach
- 9 lasagna noodles
- 2 cups ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Roast the butternut squash in the oven for 25 minutes until tender.
- In a skillet, sauté onion and garlic until fragrant, then add spinach and cook until wilted.
- In a baking dish, layer the ingredients starting with noodles, ricotta, squash mixture, and cheeses.
- Repeat layers and top with mozzarella and Parmesan.
- Bake for 30-35 minutes until bubbly and golden.
