Ingredients

- 1 head of cabbage, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1 onion, diced
- 2 green bell peppers, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups beef or vegetable broth
- 1 package onion soup mix
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion until translucent.
- Add the cabbage, carrots, celery, and bell peppers; cook for 5 minutes.
- Stir in the diced tomatoes, broth, and onion soup mix.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper before serving.
