Description

A creamy pasta dish with Cajun-spiced chicken, rigatoni pasta, and a mozzarella garlic Alfredo sauce.


Ingredients

  • 1 pound chicken breast, cut into strips
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 12 ounces rigatoni pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup chicken broth
  • Fresh parsley for garnish

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, salt, and pepper.
  2. Cook pasta according to package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned and cooked through.
  4. Add minced garlic to the skillet and sauté for 1 minute.
  5. Pour in heavy cream and chicken broth, stirring to combine. Bring to a simmer.
  6. Stir in mozzarella and Parmesan cheeses until melted and creamy.
  7. Add cooked pasta to the sauce and toss to coat.
  8. Garnish with fresh parsley before serving.

Notes

For a spicier version, increase the Cajun seasoning. Serve with garlic bread.
