- 1 pound chicken breast, cut into strips
- 2 tablespoons Cajun seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 12 ounces rigatoni pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1/2 cup chicken broth
- Fresh parsley for garnish
Instructions
- Season chicken strips with Cajun seasoning, garlic powder, salt, and pepper.
- Cook pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned and cooked through.
- Add minced garlic to the skillet and sauté for 1 minute.
- Pour in heavy cream and chicken broth, stirring to combine. Bring to a simmer.
- Stir in mozzarella and Parmesan cheeses until melted and creamy.
- Add cooked pasta to the sauce and toss to coat.
- Garnish with fresh parsley before serving.
Notes
For a spicier version, increase the Cajun seasoning. Serve with garlic bread.
