For the Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced apples
  • 12 ounces cream cheese, softened
  • 3/4 cup confectioners’ sugar
  • 1/2 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. In a separate large bowl, beat butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. Gradually add dry ingredients to the wet mixture, mixing until just combined. Fold in the diced apples. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
