Description

These caramel apple muffins feature fresh apples, chopped walnuts, and a sweet caramel drizzle, perfect for a cozy breakfast or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups peeled and diced apples
  • 1/2 cup chopped walnuts
  • 1/2 cup caramel sauce for drizzling

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the diced apples and chopped walnuts.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  8. Drizzle with caramel sauce before serving.

Notes

For a nut-free version, substitute walnuts with seeds or omit them. Store muffins in an airtight container for up to 3 days.
