Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced apples
  • 1/2 cup chopped walnuts
  • 1/2 cup caramel sauce for drizzle

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the diced apples and chopped walnuts.
  5. Divide the batter evenly among the muffin cups. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Drizzle with caramel sauce before serving.

Notes

For best results, use fresh, firm apples like Granny Smith. Store muffins in an airtight container for up to 3 days.
