- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 cup sour cream
- 1 cup semi-sweet chocolate chips, melted
- 1/2 cup caramel sauce
- 2 tbsp instant coffee granules dissolved in 2 tbsp hot water
Instructions
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition.
- Stir in sour cream, melted chocolate, caramel sauce, and dissolved coffee. Pour the batter over the crust.
- Bake for 60-70 minutes or until the center is almost set. Turn off the oven and let the cheesecake cool inside with the door slightly open.
- Refrigerate for at least 4 hours before serving.
Notes
For best results, use high-quality chocolate and caramel. Chill overnight for enhanced flavor.
