Description

A delightful fusion of caramel and flan flavors in a muffin form, perfect for a sweet treat.


Ingredients

Scale
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a saucepan, combine sugar and water. Cook over medium heat, stirring until sugar dissolves, then stop stirring and let it boil until it turns amber color. Pour into the bottom of each muffin cup.
  3. In a blender, combine condensed milk, evaporated milk, eggs, vanilla extract, and salt. Blend until smooth.
  4. In a separate bowl, whisk together flour and baking powder. Gradually add the milk mixture and melted butter, stirring until just combined.
  5. Pour the batter over the caramel in each muffin cup, filling about 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let cool, then invert to release the muffins.

Notes

For best results, chill the muffins in the refrigerator for at least 2 hours before serving to allow the caramel to set properly.
