Description
Roasted Brussels sprouts caramelized to perfection and tossed with feta, walnuts, and a sweet cranberry-honey glaze.
Ingredients

- 1 pound Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup walnuts, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup dried cranberries
- 2 tablespoons honey
Instructions
- Preheat oven to 400°F.
- Toss Brussels sprouts with olive oil, salt, and pepper.
- Spread on a baking sheet and roast for 20-25 minutes.
- In a bowl, mix cranberries and honey.
- Toss roasted sprouts with walnuts, feta, and cranberry-honey mixture.
Notes
For a vegan version, omit feta.
