Description

A delightful side dish featuring caramelized butternut squash topped with feta, walnuts, and a sweet cranberry-honey glaze.


Ingredients

  • 2 pounds butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and black pepper in a large bowl.
  3. Spread the squash evenly on a baking sheet and roast for 25-30 minutes, or until caramelized and tender.
  4. In a small saucepan, combine dried cranberries, honey, and apple cider vinegar. Heat over low heat until the mixture thickens slightly.
  5. Remove the squash from the oven and transfer to a serving dish.
  6. Sprinkle with crumbled feta and chopped walnuts.
  7. Drizzle the cranberry-honey glaze over the top.
  8. Serve warm.

Notes

For a vegan version, substitute feta with a plant-based alternative.
