- 2 pounds butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup feta cheese, crumbled
- 1/2 cup walnuts, chopped
- 1/4 cup dried cranberries
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed butternut squash with olive oil, salt, and black pepper in a large bowl.
- Spread the squash evenly on a baking sheet and roast for 25-30 minutes, or until caramelized and tender.
- In a small saucepan, combine dried cranberries, honey, and apple cider vinegar. Heat over low heat until the mixture thickens slightly.
- Remove the squash from the oven and transfer to a serving dish.
- Sprinkle with crumbled feta and chopped walnuts.
- Drizzle the cranberry-honey glaze over the top.
- Serve warm.
Notes
For a vegan version, substitute feta with a plant-based alternative.
