Description

A flavorful Mexican beef stew made with tender chunks of meat simmered in a rich tomato-based sauce.


Ingredients

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 1 cup beef broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium-high heat.
  2. Add the beef cubes and brown on all sides.
  3. Add onion, garlic, and bell pepper; cook until softened.
  4. Stir in tomatoes, beef broth, cumin, chili powder, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until meat is tender.
