- 2 pounds beef chuck roast, cut into 1-inch cubes
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tomatoes, diced
- 1 cup beef broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium-high heat.
- Add the beef cubes and brown on all sides.
- Add onion, garlic, and bell pepper; cook until softened.
- Stir in tomatoes, beef broth, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until meat is tender.
