Description

A delicious Mexican feast featuring slow-cooked pork carnitas wrapped in a warm burrito, perfect for family dinners.


Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 orange, juiced
  • 1 lime, juiced
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 6 large flour tortillas
  • 1 cup rice, cooked
  • 1 cup black beans, cooked
  • 1 avocado, sliced
  • 1 cup salsa

Instructions

  1. Season the pork with salt, pepper, cumin, and oregano.
  2. In a slow cooker, add the pork, onion, garlic, orange juice, and lime juice.
  3. Cook on low for 8 hours until the pork is tender and shreds easily.
  4. Shred the pork and mix with the cooking juices.
  5. Warm the tortillas and assemble the burritos with rice, beans, shredded pork, avocado, and salsa.
  6. Roll up the burritos and serve immediately.

Notes

For a spicier version, add chopped jalapeños to the pork mixture.
