- 1 cup shredded cheddar cheese
- 4 cloves garlic, minced

- 1 onion, diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons butter
Instructions
- In a large pot, melt butter over medium heat.
- Add diced onion and minced garlic; sautรฉ until softened.
- Add diced potatoes and fresh herbs; stir to combine.
- Pour in broth and bring to a boil; reduce heat and simmer until potatoes are tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in shredded cheddar cheese and heavy cream; heat through without boiling.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional herbs if desired.
Notes
For a vegetarian version, use vegetable broth. Adjust garlic to taste for stronger flavor.
