Description

A creamy and flavorful soup featuring cheddar cheese, garlic, fresh herbs, and tender potatoes.


Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 4 cloves garlic, minced
  • 1 tablespoon fresh herbs (such as thyme and rosemary), chopped
  • 1 onion, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons butter

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add diced onion and minced garlic; sautรฉ until softened.
  3. Add diced potatoes and fresh herbs; stir to combine.
  4. Pour in broth and bring to a boil; reduce heat and simmer until potatoes are tender.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in shredded cheddar cheese and heavy cream; heat through without boiling.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with additional herbs if desired.

Notes

For a vegetarian version, use vegetable broth. Adjust garlic to taste for stronger flavor.
