- 4 large potatoes, peeled and diced
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 4 cups chicken or vegetable broth
- 2 cups shredded cheddar cheese
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 cup milk or cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until softened, about 5 minutes.
- Add diced potatoes and broth, bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in shredded cheddar cheese, fresh thyme, rosemary, and milk or cream until cheese is melted and soup is creamy.
- Season with salt and pepper to taste.
- Simmer for an additional 5 minutes.
- Serve hot, garnished with extra herbs if desired.
Notes
For a thicker soup, add less broth or blend less. This recipe can be made vegetarian by using vegetable broth.
