Description

A creamy and flavorful soup featuring potatoes, sharp cheddar cheese, garlic, and fresh herbs for a comforting meal.


Ingredients

  • 4 large potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 cup milk or cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until softened, about 5 minutes.
  3. Add diced potatoes and broth, bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in shredded cheddar cheese, fresh thyme, rosemary, and milk or cream until cheese is melted and soup is creamy.
  6. Season with salt and pepper to taste.
  7. Simmer for an additional 5 minutes.
  8. Serve hot, garnished with extra herbs if desired.

Notes

For a thicker soup, add less broth or blend less. This recipe can be made vegetarian by using vegetable broth.
