Ingredients

  • 1 pound ground beef
  • 2 cups uncooked elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon ketchup
  • 1 teaspoon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions; drain and set aside.
  2. In a large skillet, brown the ground beef over medium heat; drain excess fat.
  3. Add chopped onion and minced garlic to the skillet; cook until softened.
  4. Stir in diced tomatoes, beef broth, ketchup, and mustard; bring to a simmer.
  5. Add the cooked macaroni to the skillet and mix well.
  6. Sprinkle shredded cheddar cheese over the top and stir until melted.
  7. Season with salt and pepper to taste; serve hot.

Notes

For a spicier version, add some chopped jalapeños or hot sauce.
