- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 package (9 ounces) refrigerated cheese tortellini
- 1 can (14.5 ounces) diced tomatoes with juices
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- Optional: Chopped pickles for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Stir in diced onion and minced garlic; cook until softened, about 3 minutes.
- Add diced tomatoes with juices, beef broth, and Worcestershire sauce; bring to a boil.
- Stir in the cheese tortellini, reduce heat, and simmer for 10-12 minutes until tortellini is tender.
- Remove from heat and stir in shredded cheddar cheese until melted.
- Season with salt and pepper to taste, and garnish with chopped pickles if desired. Serve immediately.
Notes
For a spicier version, add red pepper flakes. This recipe stores well in the fridge for up to 2 days.
