A hearty one-pot dish blending cheeseburger flavors with cheese-filled tortellini for a quick family meal.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1 can (14.5 ounces) diced tomatoes with juices
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • Optional: Chopped pickles for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned, breaking it up with a spoon.
  3. Stir in diced onion and minced garlic; cook until softened, about 3 minutes.
  4. Add diced tomatoes with juices, beef broth, and Worcestershire sauce; bring to a boil.
  5. Stir in the cheese tortellini, reduce heat, and simmer for 10-12 minutes until tortellini is tender.
  6. Remove from heat and stir in shredded cheddar cheese until melted.
  7. Season with salt and pepper to taste, and garnish with chopped pickles if desired. Serve immediately.

Notes

For a spicier version, add red pepper flakes. This recipe stores well in the fridge for up to 2 days.
