For the Crust:

  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 8 ounces button mushrooms, sliced
  • 4 slices mozzarella cheese
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons shallots, minced
  • 2 tablespoons cornstarch mixed with 2 tablespoons water

Instructions

1. Prepare the Crust:

  1. In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper and cook until golden brown on both sides. Remove from skillet and set aside.
  2. In the same skillet, add butter and shallots, sautรฉing until softened. Add mushrooms and cook until they begin to brown.
  3. Pour in Madeira wine and chicken broth, allowing the mixture to come to a boil. Stir in the cornstarch mixture and let it simmer until slightly thickened.
  4. Return chicken breasts to the skillet, spooning sauce over them, and top each with a slice of mozzarella. Cover and cook until the cheese melts and the chicken is cooked through.
  5. Serve the chicken with a generous amount of sauce.
