For the Crust:
- 4 boneless chicken breasts
- 2 tablespoons olive oil
- 1 cup Madeira wine
- 1 cup chicken broth
- 8 ounces button mushrooms, sliced
- 4 slices mozzarella cheese
- Salt and pepper to taste
- 2 tablespoons butter
- 2 tablespoons shallots, minced
- 2 tablespoons cornstarch mixed with 2 tablespoons water
Instructions
1. Prepare the Crust:
- In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper and cook until golden brown on both sides. Remove from skillet and set aside.
- In the same skillet, add butter and shallots, sautรฉing until softened. Add mushrooms and cook until they begin to brown.
- Pour in Madeira wine and chicken broth, allowing the mixture to come to a boil. Stir in the cornstarch mixture and let it simmer until slightly thickened.
- Return chicken breasts to the skillet, spooning sauce over them, and top each with a slice of mozzarella. Cover and cook until the cheese melts and the chicken is cooked through.
- Serve the chicken with a generous amount of sauce.
