A refreshing twist on classic cheesecake topped with sweet melon and fresh mint leaves.

For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 cups cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups diced fresh melon (cantaloupe or honeydew)
- 1/4 cup fresh mint leaves, chopped
Instructions
1. Prepare the Crust:
- Preheat the oven to 325ยฐF (165ยฐC). Combine graham cracker crumbs and melted butter. Press the mixture onto the bottom of a 9-inch springform pan.
- In a medium bowl, mix cream cheese and sugar until smooth. Blend in the eggs one at a time, then add vanilla extract. Pour over the crust.
- Bake in the preheated oven for 45 minutes. Allow to cool, then refrigerate for at least 4 hours. Before serving, top with diced melon and chopped mint leaves.
