Description

A refreshing twist on classic cheesecake topped with sweet melon and fresh mint leaves.


Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced fresh melon (cantaloupe or honeydew)
  • 1/4 cup fresh mint leaves, chopped

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 325ยฐF (165ยฐC). Combine graham cracker crumbs and melted butter. Press the mixture onto the bottom of a 9-inch springform pan.
  2. In a medium bowl, mix cream cheese and sugar until smooth. Blend in the eggs one at a time, then add vanilla extract. Pour over the crust.
  3. Bake in the preheated oven for 45 minutes. Allow to cool, then refrigerate for at least 4 hours. Before serving, top with diced melon and chopped mint leaves.

Notes

You can customize the seasonings to taste.
