Description

Ingredients

  • 1 pound ground beef
  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 package (9 ounces) cheese tortellini
  • 2 cups shredded provolone cheese
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Add sliced onion, bell pepper, and garlic; cook until softened.
  4. In a separate pot, cook tortellini according to package instructions; drain.
  5. To the beef mixture, add beef broth and heavy cream; bring to a simmer.
  6. Stir in shredded provolone cheese until melted and smooth.
  7. Add cooked tortellini to the sauce and toss to coat.
  8. Season with salt and pepper to taste.
  9. Serve hot.

Notes

This recipe pairs well with garlic bread. For a spicier version, add red pepper flakes.
