For the Crust:
- 1 cup all-purpose flour
- 1 cup pitted cherries
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- For the Frosting: 1 cup cream cheese, softened
- 1/2 cup pitted cherries, pureed
- 1/2 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC) and grease a cake pan.
- In a bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In another bowl, sift together flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined. Fold in the cherries.
- Pour batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely.
- For the frosting, beat together cream cheese and powdered sugar until smooth. Stir in the cherry puree.
- Once the cake is cool, spread the frosting evenly on top. Serve and enjoy!
