For the Crust:

  • 1 cup all-purpose flour
  • 1 cup pitted cherries
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • For the Frosting: 1 cup cream cheese, softened
  • 1/2 cup pitted cherries, pureed
  • 1/2 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350ยฐF (175ยฐC) and grease a cake pan.
  2. In a bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. In another bowl, sift together flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined. Fold in the cherries.
  4. Pour batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely.
  5. For the frosting, beat together cream cheese and powdered sugar until smooth. Stir in the cherry puree.
  6. Once the cake is cool, spread the frosting evenly on top. Serve and enjoy!
