- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- Cheesecake Filling:
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- Topping:
- 1 cup fresh cherries, pitted and halved
- 1/2 cup chopped pistachios
Instructions
- Preheat oven to 325°F (163°C) and line a 9×13 inch baking pan with parchment paper.
- For the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
- Bake the crust for 10 minutes, then remove and let cool slightly.
- For the filling: In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Pour the filling over the crust and smooth the top.
- Sprinkle cherries and pistachios evenly over the filling.
- Bake for 35-40 minutes or until the center is set. Let cool completely, then refrigerate for at least 2 hours before cutting into bars.
Notes
For best results, use fresh cherries if in season; otherwise, frozen cherries can be substituted. Store in an airtight container in the refrigerator for up to 5 days.
