Description

These Heavenly Cherry Pistachio Cheesecake Bars feature a creamy cheesecake base topped with sweet cherries and crunchy pistachios, perfect for a delightful dessert.


Ingredients

  • Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • Cheesecake Filling:
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • Topping:
  • 1 cup fresh cherries, pitted and halved
  • 1/2 cup chopped pistachios

Instructions

  1. Preheat oven to 325°F (163°C) and line a 9×13 inch baking pan with parchment paper.
  2. For the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes, then remove and let cool slightly.
  4. For the filling: In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  5. Pour the filling over the crust and smooth the top.
  6. Sprinkle cherries and pistachios evenly over the filling.
  7. Bake for 35-40 minutes or until the center is set. Let cool completely, then refrigerate for at least 2 hours before cutting into bars.

Notes

For best results, use fresh cherries if in season; otherwise, frozen cherries can be substituted. Store in an airtight container in the refrigerator for up to 5 days.
