For the Crust:
- 4 boneless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup fresh cilantro leaves
- 1/2 cup mayonnaise
Instructions
1. Prepare the Crust:
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat and cook the chicken until golden brown and cooked through, about 6-7 minutes per side.
- In a blender, combine cilantro, mayonnaise, aji amarillo paste, lime juice, garlic, and blend until smooth. Serve the sauce over the cooked chicken.
