For the Crust:
- 2 chicken breasts, thinly sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 tablespoon olive oil
- 2 cups cooked rice
- 1/4 cup cilantro leaves
- 1/4 cup sour cream
- 1 lime, juiced
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pan over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
- Add the sliced bell peppers to the pan and stir-fry for an additional 5 minutes until they are tender-crisp.
- In a small bowl, mix together the cilantro, sour cream, lime juice, salt, and pepper to create the cilantro lime crema. Serve the stir-fried chicken and peppers over rice, garnished with the crema.
