For the Crust:

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 cup corn kernels
  • 1/2 cup black beans, drained and rinsed
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a skillet over medium-high heat. Add diced chicken and season with chili powder, cumin, paprika, salt, and pepper. Cook until chicken is browned and cooked through.
  2. In serving bowls, layer cooked rice, chicken, corn, black beans, avocado, cherry tomatoes, and cilantro.
  3. Serve with lime wedges and additional cilantro, if desired.

Notes

You can customize the seasonings to taste.
