For the Crust:
- 2 cups cooked rice
- 1 pound chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 cup corn kernels
- 1/2 cup black beans, drained and rinsed
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
- Lime wedges for serving
Instructions
1. Prepare the Crust:
- Heat olive oil in a skillet over medium-high heat. Add diced chicken and season with chili powder, cumin, paprika, salt, and pepper. Cook until chicken is browned and cooked through.
- In serving bowls, layer cooked rice, chicken, corn, black beans, avocado, cherry tomatoes, and cilantro.
