Ingredients

  • 1 cup uncooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup black beans, drained and rinsed
  • 1 packet gluten-free taco seasoning
  • 2 cups chicken broth
  • 1 cup diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, brown the ground chicken over medium heat until fully cooked.
  2. Add the chopped onion, garlic, and bell pepper to the skillet and sauté until softened.
