- 2 lbs chicken thighs, boneless and skinless
- 2 tablespoons chipotle peppers in adobo sauce, chopped
- 1/4 cup fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 ears of corn, shucked and kernels removed
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a bowl, combine chipotle peppers, lime juice, garlic, cumin, salt, and pepper to make the marinade.
- Add chicken to the marinade, cover, and refrigerate for at least 30 minutes.
- Preheat grill to medium-high heat.
- Grill chicken for 6-8 minutes per side, or until fully cooked.
- In a skillet, heat olive oil over medium heat and sauté corn kernels and diced peppers for 5-7 minutes until tender.
- Serve grilled chicken topped with corn and pepper mixture, garnished with cilantro.
Notes
For a spicier version, add more chipotle peppers. Ensure chicken reaches an internal temperature of 165°F.
