Description

A flavorful grilled chicken dish marinated in chipotle and lime, served with sweet corn and peppers for a smoky, zesty meal.


Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 2 tablespoons chipotle peppers in adobo sauce, chopped
  • 1/4 cup fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 ears of corn, shucked and kernels removed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, combine chipotle peppers, lime juice, garlic, cumin, salt, and pepper to make the marinade.
  2. Add chicken to the marinade, cover, and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 6-8 minutes per side, or until fully cooked.
  5. In a skillet, heat olive oil over medium heat and sauté corn kernels and diced peppers for 5-7 minutes until tender.
  6. Serve grilled chicken topped with corn and pepper mixture, garnished with cilantro.

Notes

For a spicier version, add more chipotle peppers. Ensure chicken reaches an internal temperature of 165°F.
