- 1 pound flank steak
- 2 teaspoons ground chipotle powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Optional: Diced onions, chopped cilantro, and sour cream for serving
Instructions
- In a bowl, mix olive oil, chipotle powder, garlic powder, salt, and pepper. Add the flank steak and marinate for at least 30 minutes.
- Heat a grill or skillet over medium-high heat. Cook the steak for 4-5 minutes per side for medium-rare. Let it rest for 5 minutes, then slice thinly.
- Lay out the tortillas and sprinkle half of each with cheddar and Monterey Jack cheese.
- Add the sliced steak on top of the cheese on each tortilla.
- Fold the tortillas in half and cook on a griddle or skillet over medium heat for 2-3 minutes per side until golden and cheese is melted.
- Serve immediately with optional toppings like diced onions, cilantro, and sour cream.
Notes
For a spicier version, increase the chipotle powder. Ensure the steak is sliced against the grain for tenderness.
