Ingredients

  • 2 tablespoons olive oil
  • 1 pound flank steak
  • 2 teaspoons ground chipotle powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional: Diced onions, chopped cilantro, and sour cream for serving

Instructions

  1. In a bowl, mix olive oil, chipotle powder, garlic powder, salt, and pepper. Add the flank steak and marinate for at least 30 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook the steak for 4-5 minutes per side for medium-rare. Let it rest for 5 minutes, then slice thinly.
  3. Lay out the tortillas and sprinkle half of each with cheddar and Monterey Jack cheese.
  4. Add the sliced steak on top of the cheese on each tortilla.
  5. Fold the tortillas in half and cook on a griddle or skillet over medium heat for 2-3 minutes per side until golden and cheese is melted.
  6. Serve immediately with optional toppings like diced onions, cilantro, and sour cream.

Notes

For a spicier version, increase the chipotle powder. Ensure the steak is sliced against the grain for tenderness.
