A moist and rich chocolate cake made with buttermilk for added tenderness.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract

  3. Add eggs, buttermilk, oil, and vanilla; beat on medium speed for 2 minutes.
  4. Stir in boiling water (batter will be thin). Pour evenly into the prepared pans.
  5. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool in pans for 10 minutes, then remove to wire racks to cool completely.

Notes

For a richer flavor, use dark cocoa powder. Store leftovers in an airtight container for up to 3 days.
