For the Crust:

  • 1 and 3/4 cups all-purpose flour
  • 1 and 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 can (14 oz) sweetened condensed milk
  • 1/4 cup butter
  • 2 and 1/2 cups sweetened shredded coconut

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix the flour, sugar, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Pour batter evenly into the prepared pans.
  3. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cool for 10 minutes in the pans, then remove from pans to wire racks to cool completely.
  4. Meanwhile, prepare the coconut filling and frosting: In a saucepan over medium heat, combine sweetened condensed milk and butter. Stir constantly until butter melts. Remove from heat and stir in shredded coconut.
  5. Once the cake layers are cooled, spread the coconut filling between the layers and on top of the cake. Serve and enjoy.
