A simple, no-bake holiday confection featuring sweet maraschino cherries, rich chocolate, and chewy coconut.

For the Crust:
- 1 (10 oz) jar maraschino cherries with stems, well-drained
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil
- 1/2 cup sweetened shredded coconut
- 1/4 cup crushed graham crackers or vanilla wafer crumbs
Instructions
1. Prepare the Crust:
- Pat the drained maraschino cherries completely dry with a paper towel.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring between each, until melted and smooth.
- Hold a cherry by its stem and dip it into the melted chocolate, swirling to coat completely. Allow any excess chocolate to drip back into the bowl.
- Roll the chocolate-coated cherry in the shredded coconut or crushed graham cracker crumbs.
- Place the finished truffle on a baking sheet lined with parchment paper. Repeat with remaining cherries.
- Refrigerate the truffles for at least 30 minutes, or until the chocolate is fully set.
