A deliciously indulgent ice cream cake layered with chocolate chip cookie dough, perfect for any occasion.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 cups chocolate chips
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 1/2 gallon vanilla ice cream, softened

Instructions

1. Prepare the Crust:

  1. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth. Mix in the vanilla extract.
  2. Stir in the flour and salt until combined, then fold in the chocolate chips.
  3. Press half of the dough at the bottom of a springform pan. Spread softened vanilla ice cream over the dough layer, then cover with the remaining cookie dough. Freeze for at least 4 hours or until firm.
