For the Crust:
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 cups chocolate chips
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- 1/2 gallon vanilla ice cream, softened
Instructions
1. Prepare the Crust:
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth. Mix in the vanilla extract.
- Stir in the flour and salt until combined, then fold in the chocolate chips.
- Press half of the dough at the bottom of a springform pan. Spread softened vanilla ice cream over the dough layer, then cover with the remaining cookie dough. Freeze for at least 4 hours or until firm.
