For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1 cup mixed dried fruits (raisins, currants, chopped dates)
- 1/2 cup chopped nuts (walnuts, almonds)
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup brandy or orange juice
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC). Grease and line a 9×5 inch loaf pan.
- In a bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, and nutmeg. Gradually fold the dry ingredients into the wet ingredients until just combined.
- Stir in the mixed dried fruits, chopped nuts, and brandy (or orange juice) until everything is evenly distributed throughout the batter.
- Pour the batter into the prepared pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
