Ingredients

- 8 ounces cream cheese, softened
- 1 cup grated Parmesan cheese
- 1/2 cup chopped sun-dried tomatoes
- 1/4 cup chopped fresh basil
- 1/4 cup chopped Kalamata olives
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup chopped pistachios for coating
Instructions
- In a large bowl, combine cream cheese, Parmesan, sun-dried tomatoes, basil, olives, garlic powder, oregano, salt, and pepper.
- Mix until well combined.
- Shape the mixture into a log form on a piece of plastic wrap.
- Wrap and refrigerate for at least 1 hour to firm up.
- Before serving, roll the log in chopped pistachios to coat.
- Serve with crackers or bread.
Notes
For a spicier version, add red pepper flakes to the mixture.
