Description

A delightful layered dessert featuring crisp meringue, fresh berries, and whipped cream, perfect for Christmas celebrations.


Ingredients

  • 4 large egg whites
  • 1 cup caster sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 teaspoon white vinegar
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • Fresh mint leaves for garnish

Instructions

  1. Preheat the oven to 150°C (300°F) and line a baking tray with parchment paper.
  2. In a clean bowl, beat the egg whites until soft peaks form. Gradually add caster sugar, one tablespoon at a time, beating well after each addition.
  3. Add vanilla extract, cornstarch, and white vinegar, and gently fold until combined.
  4. Spread the meringue mixture onto the prepared tray to form a circle or rectangle.
  5. Bake for 1 hour, then turn off the oven and leave the meringue inside to cool completely.
  6. In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
  7. Crumble the cooled meringue into the bottom of a trifle dish.
  8. Layer with mixed berries and whipped cream, repeating layers as desired.
  9. Garnish with fresh mint leaves and refrigerate for at least 1 hour before serving.

Notes

For the best texture, assemble the trifle just before serving to keep the meringue crisp.
