- 4 large egg whites
- 1 cup caster sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 1 teaspoon white vinegar
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- Fresh mint leaves for garnish
Instructions
- Preheat the oven to 150°C (300°F) and line a baking tray with parchment paper.
- In a clean bowl, beat the egg whites until soft peaks form. Gradually add caster sugar, one tablespoon at a time, beating well after each addition.
- Add vanilla extract, cornstarch, and white vinegar, and gently fold until combined.
- Spread the meringue mixture onto the prepared tray to form a circle or rectangle.
- Bake for 1 hour, then turn off the oven and leave the meringue inside to cool completely.
- In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
- Crumble the cooled meringue into the bottom of a trifle dish.
- Layer with mixed berries and whipped cream, repeating layers as desired.
- Garnish with fresh mint leaves and refrigerate for at least 1 hour before serving.
Notes
For the best texture, assemble the trifle just before serving to keep the meringue crisp.
