Ingredients

  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a small bowl, mix together the minced garlic, rosemary, thyme, salt, pepper, and olive oil to form a paste.
  3. Rub the garlic-herb paste all over the prime rib roast.
  4. Place the roast on a rack in a roasting pan, fat side up.
  5. Roast in the preheated oven for 15 minutes, then reduce the temperature to 325°F (163°C).
  6. Continue roasting until the internal temperature reaches 120°F (49°C) for rare, or 130°F (54°C) for medium-rare, about 1.5 to 2 hours.
  7. Remove from the oven and let rest for 20-30 minutes before carving.
