Description

Festive snowball cookies inspired by tiramisu, featuring coffee and mascarpone flavors, perfect for holiday baking.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp instant coffee granules, dissolved in 1 tsp warm water
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/4 cup mascarpone cheese
  • 1/2 cup finely chopped pecans or walnuts
  • Additional powdered sugar for rolling

Instructions

  1. Preheat oven to 325ยฐF (165ยฐC) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Beat in the vanilla extract and dissolved coffee.
  4. In a separate bowl, whisk together flour and cornstarch, then gradually add to the butter mixture.
  5. Fold in the mascarpone cheese and chopped nuts until just combined.
  6. Scoop dough into 1-inch balls and place on the prepared baking sheet.
  7. Bake for 15-18 minutes, until edges are just set.
  8. Remove from oven and immediately roll in powdered sugar while still warm. Let cool completely, then roll again in powdered sugar.

Notes

These cookies develop a more intense flavor after sitting overnight. Store in an airtight container at room temperature for up to a week.
