Festive snowball cookies inspired by tiramisu, featuring coffee and mascarpone flavors, perfect for holiday baking.

- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp instant coffee granules, dissolved in 1 tsp warm water
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1/4 cup mascarpone cheese
- 1/2 cup finely chopped pecans or walnuts
- Additional powdered sugar for rolling
Instructions
- Preheat oven to 325ยฐF (165ยฐC) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Beat in the vanilla extract and dissolved coffee.
- In a separate bowl, whisk together flour and cornstarch, then gradually add to the butter mixture.
- Fold in the mascarpone cheese and chopped nuts until just combined.
- Scoop dough into 1-inch balls and place on the prepared baking sheet.
- Bake for 15-18 minutes, until edges are just set.
- Remove from oven and immediately roll in powdered sugar while still warm. Let cool completely, then roll again in powdered sugar.
Notes
These cookies develop a more intense flavor after sitting overnight. Store in an airtight container at room temperature for up to a week.
