- 2 tablespoons lime juice

- 2 ripe peaches, diced
- 1/4 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon lime juice
- 2 cups cooked rice
- 1 avocado, sliced
- Fresh lime wedges for serving
Instructions
- In a bowl, combine chicken breasts, chopped cilantro, lime juice, olive oil, garlic powder, cumin, salt, and pepper. Marinate for 10 minutes.
- Preheat grill or skillet over medium heat. Grill chicken for 6-8 minutes per side until cooked through. Let rest, then slice.
- For the peach salsa, in a bowl, mix diced peaches, red onion, jalapeño, chopped cilantro, and lime juice. Season with salt.
- Assemble bowls: Divide cooked rice into bowls, top with sliced chicken, peach salsa, and sliced avocado.
- Serve immediately with fresh lime wedges.
Notes
For a spicier version, leave the seeds in the jalapeño. This meal is best served fresh and can be customized with your favorite toppings.
