Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 ripe peaches, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 2 cups cooked rice
  • 1 avocado, sliced
  • Fresh lime wedges for serving

Instructions

  1. In a bowl, combine chicken breasts, chopped cilantro, lime juice, olive oil, garlic powder, cumin, salt, and pepper. Marinate for 10 minutes.
  2. Preheat grill or skillet over medium heat. Grill chicken for 6-8 minutes per side until cooked through. Let rest, then slice.
  3. For the peach salsa, in a bowl, mix diced peaches, red onion, jalapeño, chopped cilantro, and lime juice. Season with salt.
  4. Assemble bowls: Divide cooked rice into bowls, top with sliced chicken, peach salsa, and sliced avocado.
  5. Serve immediately with fresh lime wedges.

Notes

For a spicier version, leave the seeds in the jalapeño. This meal is best served fresh and can be customized with your favorite toppings.
