Description

Ingredients

  • 2 boneless chicken breasts
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced

Instructions

  1. In a bowl, combine cilantro, lime juice, olive oil, garlic, salt, and pepper to make the marinade.
  2. Add chicken breasts to the marinade and let sit for 30 minutes.
  3. Grill the chicken over medium heat for 6-7 minutes per side, or until fully cooked.
  4. Let the chicken rest for 5 minutes, then slice it.
  5. In a large salad bowl, combine mixed greens, avocado, cherry tomatoes, and red onion.
  6. Top the salad with sliced chicken and drizzle with extra lime juice if desired.
  7. Serve immediately.

Notes

For a spicier version, add chopped jalapenos to the marinade.
