- 2 boneless chicken breasts
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- Salt and pepper to taste
- 4 cups mixed greens
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
Instructions
- In a bowl, combine cilantro, lime juice, olive oil, garlic, salt, and pepper to make the marinade.
- Add chicken breasts to the marinade and let sit for 30 minutes.
- Grill the chicken over medium heat for 6-7 minutes per side, or until fully cooked.
- Let the chicken rest for 5 minutes, then slice it.
- In a large salad bowl, combine mixed greens, avocado, cherry tomatoes, and red onion.
- Top the salad with sliced chicken and drizzle with extra lime juice if desired.
- Serve immediately.
Notes
For a spicier version, add chopped jalapenos to the marinade.
