Ingredients

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 tablespoon ground cinnamon
  • 1/4 cup honey
  • For the topping: 1 cup brown sugar, 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 325°F and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs and melted butter; press into the bottom of the pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs one at a time.
  4. Stir in sour cream, cinnamon, and honey until combined.
  5. Pour batter over crust and bake for 60-70 minutes until set.
  6. Cool in oven with door ajar, then refrigerate for at least 4 hours.
  7. Prepare topping by mixing brown sugar and pecans; sprinkle over cheesecake before serving.
