- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 packages (8 oz each) cream cheese, softened

- 1 teaspoon vanilla extract
- 3 large eggs

- 1 tablespoon ground cinnamon
- 1/4 cup honey
- For the topping: 1 cup brown sugar, 1/2 cup chopped pecans
Instructions
- Preheat oven to 325°F and grease a 9-inch springform pan.
- Mix graham cracker crumbs and melted butter; press into the bottom of the pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs one at a time.
- Stir in sour cream, cinnamon, and honey until combined.
- Pour batter over crust and bake for 60-70 minutes until set.
- Cool in oven with door ajar, then refrigerate for at least 4 hours.
- Prepare topping by mixing brown sugar and pecans; sprinkle over cheesecake before serving.
